I don’t often post salads, so when I do you know it’s good! I got a sneak peak of some recipes of dishes that will be at Taste of Toronto this week, and this one stood out. Spring has sprung and so had salad season! Well, not that salad has a season, but I find that when Spring comes I’m just more excited about vegetables and salads (as excited as I can be about them, salads have nothing on cookies). Ricotta Gnocchi with Greens and Cream
I love gnocchi, it’s my favourite pasta. Years ago, I ate my way through Italy and had to have gnocchi every single day; if I didn’t have it at lunch, I had to have it for dinner. There was a bit of a disaster a few years ago when I tried to make gnocchi from scratch, but when I saw this recipe I knew I had to try again. The gnocchi and the sauce are delicious, but I also use this recipe just for the gnocchi and switch up the saucy component. Hope you enjoy!

Ricotta, Kale, and Spinach Stuffed Shells
I saw a picture of these online and instantly knew I had to make them, possibly because the image was tagged as Food Porn and they looked worthy of the title. I used my family as guinea pigs, and my mom was happy that it was a way to get us to eat kale, which is great for you but not everyone’s favourite. They were fun to make, though a little messy to fill with spoons (I would suggest a Ziplock piping bag rig). My photos aren’t as good as the post I saw, but they tasted great! Continue reading
