I am not a morning person by any stretch of the imagination, so anything that is quick and/or easy in the morning is my friend. After picking up many breakfast sandwiches because I was running late, I decided to make my own quick and easy version at home. I like to use bagels (because I love bagels) but it works just as well with any type of toast. Enjoy!
Quick & Easy Breakfast Sandwich
Ingredients
- 1 sliced bagel or 2 slices of bread
- 1 egg
- 1 egg white (I use a splash of store bought egg whites) – optional, if not use a bit more milk or a whole egg
- Spash of milk
- Butter or margerine
- Salt and pepper, to taste
- Sliced toppings of your choosing (cheese, veggies, etc.)
Directions
Whisk egg, egg white, and milk in a small microwave-safe bowl.
Place bagel/bread in toaster and toast.
While toasting, microwave egg mixture on high for 1:55, add :15 (or more/less depending on your microwave) if not cooked enough.
While egg mixture is in the microwave, bagel/bread should finish toasting. Spread with butter/margarine and leave open faced.
Use towel/oven mitts/sleeves to remove bowl from microwave (it will be hot!) and use a fork to go around the edges of the bowl to unstick the egg. Transfer the egg onto the bagel/toast, sprinkle with salt and pepper, add sliced toppings, close sandwich, and cut in half. Enjoy!
