Georgia’s Blueberry Cake

Blueberry CakeThis recipe comes from my 12 year old sister’s best friend Georgia. It’s such a simple and great recipe, and it’s dairy-free! I’ve included the original hand-written recipe she  gave my family a couple years ago after we had it at her house, see below it’s pretty cute.

Blueberry Cake

Ingredients

  • 2 eggs
  • 1 cup + 1 teaspoon sugar
  • ½ cup canola oil
  • ½ cup orange juice
  • 1¾ cup + 1 tablespoon flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 pint blueberries (large container)
  • ½ teaspoon cinnamon

Directions

Preheat oven to 350oF.

Blend together eggs and 1 cup of sugar.  Add oil, orange juice, 1¾ cups of flour, baking powder and vanilla and mix well.

Toss blueberries with 1 tablespoon of flour, and gently mix into the batter by hand to avoid breaking the berries.

Pour batter into greased 8×8 inch pan. Combine the rest of the sugar with cinnamon and evenly sprinkle over the batter. Bake for 50 minutes.

Note: this would look great in a bundt pan but I haven’t done it yet, so you’d have to play around with the baking time if you do it (and let me know the results!).
