These meringues are a light, sweet, chocolately escape. They are simple to make, melt in your mouth, and are a great dessert or snack. My mom makes these every year for Passover, but I eat them all year round. Enjoy!
Chocolate Chip Meringues
Ingredients
- 3 egg whites
- Pinch of salt
- 1 cup sugar
- 1 cup semi-sweet chocolate chips
- 2 tbsp unsweetened cocoa
- ½ tsp vanilla
Directions
Preheat oven to 275oF and line baking sheets with foil.
In a large bowl, beat egg whites with salt until just stiff, then gradually beat in sugar until stiff peaks are formed.
Fold in the chocolate chips, cocoa powder and vanilla.
Drop tablespoons of batter onto the prepared baking sheets and bake for 30 minutes.
Transfer entire foil sheets onto racks or a cool counter to cool. Store in an airtight container.
