I love Middle Eastern food! Give me falafel, shawarma, hummus, anything, and I’m a very happy camper. While lots of the side dishes can be made at home, many of my favourites require frying or special equipment, so I was very excited when I came across this recipe. I kept it simple and put hummus, cucumbers, and tomatoes in a multigrain pita with the shawarma, but you can throw in anything. Hope you enjoy!
Baked Chicken Shawarma
Ingredients
Chicken
- 1 chicken breast, sliced into strips
- 1 teaspoon ground cumin
- 1 teaspoon ground clove
- ½ teaspoon ground allspice
- 1 teaspoon ground coriander
- 1 teaspoon ground mustard
- 1 teaspoon ground cinnamon
- salt and pepper to taste
- ¼ cup olive oil
- 1 lemon, sliced into wedges
- Paprika (optional)
Note: if making more, double the spices for every additional chicken breast.
For the Sandwich
- Pitas, cut in half
- Hummus
- Cucumber, diced
- Tomato, diced
- Onion, thinly sliced (optional) and any other vegetables/condiments you’d like
Directions
Preheat oven to 400oF and line baking sheet with tin foil.
Mix spices in a small bowl. Place chicken in a medium bowl and coat with olive oil. Pour spice mix over chicken and toss thoroughly to coat completely. Arrange chicken on prepared baking sheet and bake for 20-25 minutes.
While baking, cut the pitas and vegetables. Once ready, spread the hummus on one side of the inside of the pita, put in a couple pieces of the chicken shawarma, top with vegetables, and enjoy!
